Naturopathy Dishes……

1.) GRILLED PULSE SANDWICH:

Ingredients:

  • Moong Dal(Black)- 2 cups
  • Cucumber- 1/4no. Cut into round Slices.
  • Tomato- 1/4no. Cut into round slices.
  • Beet Root-1/4no(4-5 pcs). Cut into round slices.
  • Onion-1/4no(4-5 pcs). Cut into round slices.
  • Pudina- 1/4 vati
  • Green Chillies- 2-3 pcs
  • Ginger-1 small
  • Cabbage- 1/4 vati grated finely.
  • Corriander-1/4 vati.
  • Salt- As per Taste
  • Ghee- 1 tsp.

Note:( No=Number. pcs= piece)

Method:

1. For Dal:

-Soak Moong dal about 3 hours prior to the cooking.

-Remove water and grind moong dal in the grinder.

– Add Salt, Ginger and Green chillies to the batter according to the taste.

– Batter is ready.

 

2. For Chutney:

– Wash Pudina.

– Add Salt , Ginger and Green chillies to the mixer and grind it into chutney.

 

Arrangement:

  1. Grease One thali with few drops of Ghee.
  2. Spread a Thin layer of Batter into the Thali.
  3. On top of the thin layer of batter arrange sliced cucumber, tomatoes, onion and beetroot, just like a Sandwich.
  4. After the layer of vegetables, spread chutney on it.
  5. At the End, Cover it with thin layer of Batter again.
  6. Cooking Medium would be Steaming.
  7. Boil Water in the Deep Vessel and keep the thali on boiling water and Cover the vessel with lid.
  8. Cook it till 10 minutes.
  9. Off the flame and remove the thali from the vessel. Let it cool for sometime.
  10. Cut it in the shape of Bread Slices.
  11. Remove it from the Thali and Serve it into the serving Plates.
  12. Garnish with coriander and grated cabbage on it.

2.) SWEET RED:

Ingredients:

  • Tomato- 3 medium size.
  • Lemon- 1 pc.
  • Rock Salt-  For Taste.
  • Jaggery- 50 gm.

 

 

Method:

  1. Boil tomatoes and grind it in mixer to have pulp.Strain the pulp.
  2. Take a Vessel add 50 gms Jaggery and 2 cups of water in it and boil it till 1 rise.
  3. Strain it and allow it to cool.
  4. Mix the tomato pulp and Jaggery water and sprinklerock salt to it according to taste.
  5. While Serving add Lemon juice to it.

3.) VEGETABLE DRYFRUIT HALWA:

 

Ingredients:

  • Bottle Gourd- 1/4  kg.
  • Carrot – 2 medium size, Finely Grated.
  • Milk Cream- 200gm / Milk- 2 litres.(Can take any one)
  • Organic Jaggery- 100 gm.
  • Grated Coconut- 1 vati.
  • Black Dates- 50 gm, Finely chopped.
  • Almonds- 50 gm, Finely chopped.
  • Anjeer-50 gm, Finely chopped ( Dry Figs).

 

Method:

-In a pan heat Milk or Milk cream. Add grated bottle gourd and

carrot to it.

– Stir continuously.

– Let it get  thicker.

– Add Jaggery to it. Stir it for sometime.

– Jaggery should melt in the mixture.

– Add black dates, anjeer and grated coconut into the pan.

– Mix the entire mixture properly.

– Serve hot in a bowl and garnish it with grated almonds.
